I picked up this inflatable kayak for $180 (last winter) https://www.amazon.com/Intex-Explorer-K ... 3075&psc=1 and it's been a blast for my family. We hit Round Valley last week and then, yesterday, Merrill Creek Res. Set up is easy--about 10 mins of pumping and putting oars together. The boat--if you want to call it that --is pretty sturdy and steers well with the addition of the insertable skeg.
I outfitted my sons with my 3-wt Avid St. Croix and some terrestrials (Chernobyl ant was fantastic) and they had tons of fun along the banks catching bluegill, bass, and sunnies. Good times and not a meat-slinger in sight
